-Quick Pickle or Curried Quick Pickle
-Toss with neutral oil, salt, pepper, cumin, and smoked paprika, and roast in a 425° oven till evenly browned 30-40 minutes. Add to tacos, burritos, rice bowls. Just make sure there’s lots of avocado!
